Easy Lemon Pesto Recipe
If we have met, it is likely that you will be made aware of my love for basil. It is such a beautiful, fragrant, delicious, versatile herb to have in your kitchen.
Before coming to Hawai'i, I was working on getting the word out about growing your own plants at home and the benefits of what it can do for you. The small town where I came from wasn't accustomed to using fresh herbs in their recipes, so introducing herbs like basil and lemongrass, for example, was sort of innovative.
The opportunity to contribute to pitch-in dinners, I brought salads and teas made with my herbs.
One of my favorite and easiest recipes to make is a pesto sauce.
I love pesto because you can put it on top of meats and breads, inside pasta dishes, or even on top of your eggs! When I was co-managing a community garden back home, I planted a few different varieties of basil - Genovese, Thai, and a purple variety for some extra "je be sais quoi".
When I started growing here, it was a must that I continue my basil pursuit and even diversify it a little more.
Enter Mrs Burns Lemon Basil.
I don't know who Mrs Burns is, but she definitely has it goin on in her herb garden. This is my favorite basil yet. Soon, I will get to test whether I love lemon, lime, or cinnamon basil more after the next set of seeds arrive.
For now, I wanted to share a quick and easy recipe for lemon basil in case you buy some from me.
Because I don't love following directions and really love to get creative, my recipes are suggestions, and I encourage you to test and make these your own to satisfy your own taste buds and happiness.
Easy Lemon Basil Recipe

2-3 tight fisted handfuls of lemon basil

6 garlic cloves

Juice of half or one whole lemon (start with half in case it is lemon overkill)

1/2 C walnuts, pecans, or pine nuts

1/2 C parmesan or feta cheese

1/2 C olive oil

1/4 -1/2 tbsp sea salt
Toss it all in the food processor or blender, blend til it is similar to applesauce in texture. Taste it and see what you think.
